I don't know about you but toward the end of summer I have a really hard time deciding what to make for dinner. I am tired of the recipes that I have been repeating all summer but it is still too hot out to start making warm and hearty comfort food. This recipe is a great addition to our usual summer recipe rotation. It is really easy and the slow-cooker won't heat up your kitchen.
The original recipe called for chicken thighs but it was a little too greasy for my liking so I switched to chicken breasts and I think it gives it a lighter and fresher taste. This recipe can be served hot as described below but it is just as delicious served cold if it is too warm out to enjoy a hot sandwich.
Slow-Cooker Chicken Caesar Salad Sandwich
adapted from The Girl Who Ate Everything
2 lb Boneless Skinless Chicken Breasts
1-2 cups Water
1/2 - 1 cup Caesar Dressing
1/2 cup Parmesan Cheese, shredded
1/2 teaspoon Freshly Ground Black Pepper
2 cups Shredded Lettuce (I could only find Iceberg this time but Romaine is better)
Wheat Bread or Buns
Place chicken in slow-cooker and top with 1-2 cups water (the amount of water you need will depend on the size of your slow-cooker a larger one will require more water than a smaller one). Cover and cook on low for 4-6 hours.
Remove chicken from slow-cooker and discard water. Shred chicken and return to slow-cooker. Top with caesar dressing, parmesan cheese, and black pepper. Stir until well combined. Cover and cook on high for 30 minutes or until heated through.
Spoon mixture onto bread or buns. Top with lettuce and serve.
