Ranch Chicken Salad


This chicken salad tastes great and there are a few veggies thrown in to up the nutrition factor and the fresh flavor. Great for a summertime lunch.

Ranch Chicken Salad
adapted from Taste of Home

1/4 cup Mayonnaise
3 Tablespoons Ranch Salad Dressing
3 Tablespoons Sour Cream
1 Tablespoon Lemon Juice
1/8 teaspoon Fresh Ground Black Pepper
2 cups Cubed Cooked Chicken Breast
1/2 cup Thinly Sliced Celery
2 Tablespoons Diced Red Bell Pepper
1 Tablespoon Diced Red Onion
6 Whole Wheat Hamburger Buns
Lettuce
Sliced Red Onion

Place the mayonnaise, ranch dressing, sour cream, lemon juice and pepper in a medium bowl. Stir until smooth. Add the chicken, celery, red pepper, and onion and stir until well combined. Spoon 1/3 cup onto each bun and top with lettuce and red onion slices, if desired. 

Makes: 6 Sandwiches

  3. This is a really great recipe. After seeing this a few months ago, it is now a weekly munch for our family. I eat it in pita bread exactly as you make it & my DH loves it on a bun but adds a tiny bit of bacon to it. Thanks for a really easy recipe to add to our weekly meals plans. :-)
