Orange Soda Cupcakes


Soda pop cupcakes were the first thing that Shelby ever cooked for me. We were still "just friends" at that point and he apparently had a huge crush on me so he may have been attempting to woo me with his mad baking skills. ;) If I remember correctly, he made them with Fufu Berry Jones Soda that night. 

After making these using a bunch of different flavors, we have decided that orange soda is our favorite. It has the most flavor and is something that you don't hear of everyday. You can use any flavor of pop that you like though and try mixing it with different cake flavors like chocolate cake mix with root beer.

Whatever flavors you choose, these cupcakes are unbelievably moist and delicious. People are always intrigued when they first hear what the ingredients are so they are fun to take to parties. They are really easy to make so they are a great baking project for small kids too. 

Orange Soda Cupcakes

Ingredients:
1 box of Plain White Cake Mix
12oz Orange Soda
White Icing (optional)

Preheat oven to 350F.

In a large bowl, whisk the cake mix (just the dry mix - DO NOT add the eggs, oil or anything else to it) to remove any large clumps. Add the orange soda and blend with the whisk. Do not over-mix. Batter will be thick and slightly lumpy.

Line cupcake pan with foil baking cups. Fill each cup about 2/3 full with batter.

Bake 12-15 minutes or until the cupcakes feel firm when you lightly tap the top. Let cool for 2 minutes before removing to a wire rack. Cool completely then top with icing, if desired.

Makes about 16 cupcakes.

  1. I know embracing the diet soda is a bad idea, but I would like to know if these work with diet orange pop? Because that would make for some pretty low calorie cup cakes! Thank you for the recipe, and the story. Aren't men who bake cup cakes adorable?

    1. I have never tried it with diet so I don't know if it would affect the way it bakes or not. It was always so cute whenever Shelby would cook. Of course that was about eight years ago. Today he tried to bake some frozen biscuits and freaked out because one of the burners was really hot and he didn't realize that was where our oven vented out because he had never used it before. Haha!
