Soft & Chewy Peanut Butter Cookies


I'm sure most of you already have a peanut butter cookie recipe but if you are on the search for a new one you should really try these!  They are full of peanut butter flavor, soft, chewy and moist.  These are my favorite cookies and they turn out perfectly every time.  :)

Soft & Chewy Peanut Butter Cookies

Ingredients:
1 1/4 cup Creamy Jif Peanut Butter (I usually use the Target generic version)
1/2 cup Vegetable Shortening
1 1/4 cup firmly packed Light Brown Sugar
3 Tablespoons Milk
1 Tablespoon Pure Vanilla Extract
1 Egg
1 3/4 cup All-Purpose Flour
3/4 teaspoon Salt
3/4 teaspoon Baking Soda

Preheat oven to 375F.  In a large bowl, combine peanut butter, shortening, brown sugar, milk and vanilla until well blended.  Add the egg and beat just until blended.  In a small bowl, combine flour, salt, and baking soda.  Gradually add to creamed mixture at low speed.  Mix just until blended.  

Form into 1-inch balls using a cookie dough scoop and place onto an ungreased cookie sheet 2-inches apart.  Flatten slightly with a fork in a criss-cross pattern.  Bake at 375F for 6-8 minutes or until bottoms are very lightly browned.  Do not overbake.  Cool 2 minutes on baking sheet before moving to a cooling rack.  

Makes about 3 Dozen.

  3. YUM, these look perfect! My husband LOVES peanut butter cookies, but I usually just use the bag mix. Thanks so much for the great recipe, I know my hubby will appreciate it knowing they are made from scratch, woohoo!
